My Favorite Maqloob Sandwich
30 mins prepServes 4
Inspired by childhood memories of a deconstructed maqloob, this sandwich features flavorful marinated chicken, fried potatoes and eggplant, and fresh vegetables for a customizable and delicious meal.
1. Prepare the chicken marinade: Cut chicken breasts into thin slices. In a bowl, combine the sliced chicken, minced garlic, chopped large onion, plain yogurt, olive oil, seasoned salt, coriander, paprika, cumin, garlic powder, onion powder, chili flakes, cinnamon, and the juice from one lemon.
2. Marinate the chicken: Mix all chicken ingredients thoroughly until well coated. Let it marinate for at least a couple of hours in the refrigerator.
3. Cook the chicken: Once marinated, cook the chicken in a pan or oven until it is fully cooked through and browned.
4. Prepare the fried vegetables: Peel, slice, and fry the 3 potatoes until golden and tender. Partially peel, slice, and fry the 1 eggplant until soft and browned.
5. Prepare fresh toppings: Slice and chop red onions, tomatoes, lettuce, and parsley to your desired size for the sandwiches.
6. Assemble the sandwiches: Arrange all cooked chicken, fried potatoes, fried eggplant, and fresh toppings (red onions, tomatoes, lettuce, parsley) on a large serving plate or board. Let your family and friends pick and choose what they want in their sandwiches and enjoy.
